Chicken Zucchini Soup

Got this recipe from Trader Joes...It's delicious and the entire family loved it. I put Broccoli in it too (for Curly who won't eat Zucchini, but will eat little trees)

Chicken Zucchini Soup
1 lb. Boneless Chicken – cooked and cubed or shredded
1- 32 oz. Free Range Chicken Broth
2- 12 oz. Roasted Garlic Salsa
1 Can Black Beans
5 Zucchini – cubed ¼ “ thick
1 C Heavy Cream
Garnish- Shredded Mexican Cheese Blend, Avocado, Cilantro, Sour Cream (if you don't put in the Heavy Cream)

Combine the first 5 ingredients (except cheese). Cook until zucchini is tender, add heavy cream. Garnish with cheese and ENJOY!

Mmmm That sounds delish! TJ's should totally publish a recipe book. They have such great ideas and yummy samples.

Dai - I just printed out this recipe and am going to make this yummy sounding soup on this rainy day--sounds perfect!!

I made this last night and it was delicious! A new favorite! Keep posting recipes! I always make those delicious short ribs too.
